Signature Gold Tech Spec:

Green bean moisture: 10.6%

Recommended 10-12% moisture content prior to roasting. This shows correct storage and processing for green beans. 

Caffeine Content: 298 mg/100ml

What is caffeine? Caffeine is a stimulant, which means it increases activity in your brain and nervous system. It also increases the circulation of chemicals such as cortisol and adrenaline in the body. 

Chlorogenic Acids: 356 mg/100ml

What is Chlorogenic acid (or polyphenols)? Chlorogenic acid is a phytochemical found in coffee and coffee beans. It has been touted as being able to reduce blood sugar levels and potentially exert an anti-diabetic effect. It has also been implicated in weight loss and exerting an anti-obesity effect, but that is insofar correlation and not necessarily due to chlorogenic acid.

What's the Agtron® mean in coffee? The Agtron is a spectrophotometer which uses infrared light to determine roast degree. The higher the Agtron number, the lighter the roast. Agtron parameters range from about 55 on our lightest roasts to 25 on our darkest. This digital device validates the roaster's decisions concerning the degree of roast and removes any doubt of different perceptions when it comes to light or dark roasts.
